Preheat the oven to 365°F (185°C). Meanwhile, separate egg whites from yolks and place them into medium-sized bowls.
Add 7 tablespoon of the sweetener to the yolks, adding the remaining 2 tablespoon and a pinch of salt to the egg whites.
Whisk the yolks until the mixture increases in volume by approx. ⅓ and becomes significantly lighter, then add flour and mix with a spoon or a mixer to combine.
Whip the egg whites until stiff foam. Slowly fold into the egg yolk and flour mixture.
Line a baking sheet with parchment paper, pour the batter into the baking sheet, and level with a spoon or spatula.
Bake for 20-25 minutes until the batter rises and becomes light golden brown.
Remove from the oven, set aside to cool completely, then cut into 3 equal pieces.
Meanwhile, prepare the filling cream: add sweetener and cream cheese to a mixing bowl and mix until uniform. Add cold heavy cream and whisk until stiff.
Assemble the cake: Take the first cake layer and cover it with a generous amount of the filling cream, add the second cake layer on top and cover it with the cream. Finally, place the last cake layer on top, followed by a finishing layer of cream. Decorate with your favorite berries, fruits, or other toppings.
