Sugar-Free Mother's Day Cake (Easy Recipe For The Best Mom)

This simple layered Mother's Day cake is perfect for teens looking to surprise their moms. Made with easy-to-find ingredients and topped with fresh fruits and berries, it's a sweet gesture of love!

Ingredients
  

Cake Layers

  • 9 eggs
  • 9 tablespoon all-purpose flour
  • 9 tablespoon sweetener (monk-fruit or erythritol-based; can be replaced with sugar)
  • 2-3 drops vanilla extract
  • teaspoon salt

Cream

  • 2 ½ cups (500 g) cream cheese (Philadelphia or similar)
  • 1 ½ cups (350 g) heavy cream
  • 3.5 oz (100 g) sweetener

Decoration

  • 1 cup fresh and/or dried fruits and berries

Instructions
 

  • Preheat the oven to 365°F (185°C). Meanwhile, separate egg whites from yolks and place them into medium-sized bowls.
  • Add 7 tablespoon of the sweetener to the yolks, adding the remaining 2 tablespoon and a pinch of salt to the egg whites.
  • Whisk the yolks until the mixture increases in volume by approx. ⅓ and becomes significantly lighter, then add flour and mix with a spoon or a mixer to combine.
  • Whip the egg whites until stiff foam. Slowly fold into the egg yolk and flour mixture.
  • Line a baking sheet with parchment paper, pour the batter into the baking sheet, and level with a spoon or spatula.
  • Bake for 20-25 minutes until the batter rises and becomes light golden brown.
  • Remove from the oven, set aside to cool completely, then cut into 3 equal pieces.
  • Meanwhile, prepare the filling cream: add sweetener and cream cheese to a mixing bowl and mix until uniform. Add cold heavy cream and whisk until stiff.
  • Assemble the cake: Take the first cake layer and cover it with a generous amount of the filling cream, add the second cake layer on top and cover it with the cream. Finally, place the last cake layer on top, followed by a finishing layer of cream. Decorate with your favorite berries, fruits, or other toppings.

Notes

  • It's important to use cold cream cheese and heavy cream so the cream doesn't become grainy.
  • If you're OK with using sugar, feel free to replace the sugar-free sweetener with regular table sugar.
