Equipment

  • 1 barbecue grill

Ingredients

  • 900 g ground beef
  • 2 onions
  • 4 cloves of garlic
  • 2 tablespoon olive oil
  • ½ teaspoon hmeli suneli seasoning (optional)
  • ¼ teaspoon chili powder
  • 2 round loaves of bread (21 cm diameter; please see the notes below)
  • 1 large tomato
  • 6 pickled cucumbers
  • lettuce leaves (enough to cover the diameter of the burger)
  • 200 g mayonnaise (low-sugar)
  • 200 g tomato sauce (low-sugar)
  • 400 g grated cheese
  • spring onions
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoon teriyaki sauce

Instructions

  • Mix the ground beef with one finely chopped onion and 4 cloves of garlic, add salt, pepper, olive oil, chili powder, and hmeli suneli seasoning. Mix well (using your hands or a mixer) to combine all the ingredients. Refrigerate for two hours.
  • Meanwhile, slice the burger bread. Depending on the thickness of your loaf of bread, you might want to cut the middle section out (like we did in our video below), or you can simply cut the loaf in half horizontally.
  • After 2 hours, remove the meat from the fridge and shape it into 1cm thick round patties, around 10 cm in diameter.
  • Toast the bread (both sides) on the grill with the lid open.
  • Grill the beef patties, approx. 1.5 min on each side, repeat 2 times (each side of the patties needs to be grilled 3 x 1.5 min; it will ensure the meat is cooked well but remains juicy). The grill temperature needs to be 150-180°C (300-350°F).
  • Add a droplet of teriyaki sauce on each meat patty and spread it evenly using a silicone brush (only on one side of the patty).
  • Top the patties with the grated cheese and close the grill lid. Allow the cheese almost (!) to melt. Then transfer the patties to a plate - the cheese will continue melting.

Start assembling the burgers!

  • Spoon the sauce (made by mixing tomato sauce and mayonnaise) generously over each piece of the bread (the flat side).
  • Stack the burger ingredients in the following order (from bottom up):
    pickled cucumber slices
    lettuce leaves
meat patties (add as many as needed to cover the slice of the bread)
    tomato slices
    onion rings
    chopped spring onion
  • Finally, place the upper part of the burger bun on top and press slightly.
  • Slice the XL burger into 4 parts and enjoy while it's warm and juicy!

Notes

  • Add 1 tablespoon of vinegar to the sauce mixture if the mayonnaise and tomato sauce don't contain vinegar.
  • We used our homebaked bread - from the indicated ingredients, you can make two large round loaves of bread with eight servings, or even more if you don't cut the middle section out and divide the dough among three bread molds.
  • Homemade blue cheese dip with roasted pecans is also a great sauce for burgers.
