- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoon erythritol-based sweetener
- ⅓ teaspoon salt
- 1.5 cups dairy-free milk (almond, coconut, or another type of milk)
- ½ cup vegetable oil
- 2 eggs
Preheat your waffle maker and lightly grease it with non-stick spray or a brush of oil to prevent sticking.
In a large bowl, whisk together the flour, baking powder, sweetener, and salt.
In another bowl, whisk two large eggs, non-dairy milk, and vegetable oil until well combined.
Pour the wet ingredients into the dry ingredients and gently mix until just combined.
Pour the batter into the preheated Belgian waffle iron, making sure not to overfill. Close the lid and cook until the waffles are golden and crisp. Carefully remove the waffles and serve hot with your favorite toppings!
- A perfect waffle batter is slightly thicker than the crepe pancake batter but not too thick.
- Make sure to use enough batter to cover the whole surface of the waffle iron, or the waffles will have holes in them.
