Leftover Pulled Pork Breakfast With Scrambled Eggs

Ingredients
  

  • 1.5 cups (300-350 g) pulled pork
  • 4 eggs
  • a pinch of salt and pepper
  • ½ onion
  • cup Cheddar cheese
  • 2 tablespoon olive oil

Instructions
 

  • Preheat the skillet, add olive oil and the pulled pork, season with salt and pepper, and cook for about 5 minutes.
  • Add chopped onion and continue cooking until translucent and light brown.
  • Add scrambled eggs, and cook, stirring occasionally, until they're no longer raw.
  • Sprinkle with grated cheese, put on the lid, turn off the heat and leave for another 2 minutes to allow the cheese to melt.

Notes

  • Use cheese that melts well, e.g. Cheddar cheese.
  • Cook pulled pork at home or buy a ready-made one at a store.
  • Sprinkle with fresh parsley (optional).
  • Alternatively, serve it on toasts or as a filling in your breakfast sandwiches.
