- 1.5 cups (300-350 g) pulled pork
- 4 eggs
- a pinch of salt and pepper
- ½ onion
- ⅔ cup Cheddar cheese
- 2 tablespoon olive oil
Preheat the skillet, add olive oil and the pulled pork, season with salt and pepper, and cook for about 5 minutes.
Add chopped onion and continue cooking until translucent and light brown.
Add scrambled eggs, and cook, stirring occasionally, until they're no longer raw.
Sprinkle with grated cheese, put on the lid, turn off the heat and leave for another 2 minutes to allow the cheese to melt.
