You might not be willing to start your day too early just to prepare pulled pork from scratch, but this recipe will give you an idea for a quick and tasty breakfast if you have some leftover pulled pork waiting for its time to shine.

With the seasoned pulled pork and gooey melted cheese complementing the fluffy scrambled eggs, every bite is packed with flavors.

Don't have any leftover pork in the fridge? No worries! Store-bought pulled pork will work just as well.

    Why You'll Love This Recipe

    • It'll allow you to make a delicious and easy breakfast in only 15 minutes!
    • This is a great way to make use of any pulled pork leftovers you have stacked in your fridge.
    • It only takes a few simple ingredients yet provides a balanced flavor.
    • It's aligned with a low-carb diet and is a great option for those on a keto diet.

    Ingredients

To make this satisfying pulled pork breakfast skillet, you'll need:

Ingredients of pulled pork breakfast with scrambled eggs.
    • (Obviously) Pulled Pork (aka. pork carnitas): You'll only need around 1.5 cups of pulled pork for two servings. The intensity of the pulled pork does make a difference in this dish. Our pulled pork recipe ensures a medium level of spiciness and intense flavor that's ideally suited for this breakfast dish.
    • Eggs: With scrambled eggs and pulled pork, you'll have a quick and easy one-pan breakfast. This is a great way to start your day when you're in a hurry or simply not in the mood to spend an hour in the kitchen. This recipe calls for four eggs for two persons; however, feel free to adjust it if needed.
    • Salt and Ground Black Pepper: The more spicy and salty the pulled pork, the less spicing you need. Feel free to adjust salt and pepper to taste. We usually prefer sea salt, but any other type of salt will also work (you might only need to adjust the amount based on the intensity of the salt used).
    • Cheese: Cheese needs to melt well to ensure the gooey texture of the finished dish. Cheddar is, therefore, our go-to option.
    • Onion: This is an optional ingredient that can be skipped if you don't like onions. We do like them (a lot), and they're a great addition to this recipe that we never skip. White onions can be replaced with red onions for an even milder taste.
    • Olive Oil: You'll need just a touch of extra virgin olive oil for cooking. We replace it with fresh farm butter, whenever possible, for extra flavor and tenderness.

    Now, on to the cooking!

    Directions

    1. Preheat the skillet, then add some olive oil and the pulled pork, season with salt and pepper to taste (if needed), and cook on medium heat for about 5 minutes.

And that's really it! In as little as 15 minutes, your kitchen will be filled with inviting flavor, and you'll have a hearty breakfast ready to enjoy.

    Variations and Tips

    • Garnish with fresh herbs (like cilantro or parsley) for color contrast and extra flavor.
    • Add some cubed potatoes for a satisfying pork breakfast hash, or go even further by adding bell peppers and other veggies of your choice for a casserole that's satisfying enough for dinner.
    • Increase the amounts to make a delicious breakfast for your whole family in a large skillet.
    • Alternatively, serve it on toasts or as a filling in your breakfast sandwiches.
    • Add some hot sauce, teriyaki or barbecue sauce if the pulled pork you use lacks flavor. If you're a blue cheese lover, our blue cheese dip with roasted pecans is another great option to consider!
    • If you're craving a fried egg with a runny yolk, this recipe can be tailored to replace scrambled eggs with one or two fried eggs added to each serving.

    Frequently Asked Questions

    How To Store Any Leftovers?

If you made too much of the pulled pork breakfast, simply let it cool down to room temperature, transfer it to an airtight container, and refrigerate for 3-4 days.

What if I still have some pulled pork left after trying this breakfast recipe?

One of the best things about pulled pork is its versatility as an ingredient. Pork leftovers can be used in burgers, tacos, casseroles, sandwiches, quesadillas, pizzas, burritos, enchiladas, pepper stuffing, ramen, and many other dishes.
