- 2 cups (ca. 300g) dried dates (pit-free, with no added sugars)
- 3 tablespoon sugar-free peanut butter
- 2 bars sugar-free chocolate (1 milk chocolate & 1 white chocolate)
- ⅓ cup heavy cream
Cut each date in half and place them in a food processor fitted with a blade attachment. Pulse until finely chopped (about 1 minute).
Transfer the chopped dates to a bowl and mix with the peanut butter using a spoon until well combined.
Line a medium or large container (such as a baking dish) with parchment paper and spread the date mixture evenly inside. Press it down lightly to remove any gaps and create a level surface.
In a saucepan, combine the chocolate pieces and heavy cream. Melt over low heat, stirring frequently, until smooth. Alternatively, microwave in short intervals, stirring between each, until fully melted.
Pour the melted chocolate over the date mixture and spread evenly with a spoon. Transfer the container to the freezer and freeze until firm (at least 2 hours).
