If there's one thing I always keep in my freezer for a quick pick-me-up, it's a stash of these sugar-free date barks. With just four ingredients, a simple process, and a perfectly sweet yet balanced flavor, they've become an absolute must-have in our sugar-free household.

Finding satisfying sweet snacks can be tricky when you're cutting back on sugar or transitioning to a sugar-free lifestyle. Cravings don't just disappear-we all want that little energy boost or moment of indulgence now and then. That's where these chocolate date barks come to the rescue.
All you need are four ingredients: dried dates (preferably pre-pitted), sugar-free chocolate, sugar-free peanut butter, and heavy cream. That's it!

For the chocolate, I love and recommend Torras. If it's not available where you live (quite common outside Europe), just use any quality sugar-free chocolate. To strike the perfect flavor balance, I suggest combining milk chocolate with white chocolate. That said, I've also made these with just milk chocolate-or even just dark chocolate-and they still turn out delicious. In fact, depending on your taste, one of those variations might even become your favorite. Personally, I keep coming back to the milk-and-white combo.
And here's a fun tip: experiment with flavored chocolates! A touch of salted caramel or another twist can pair beautifully with peanut butter, adding that little something extra.

I usually rely on a food processor for this recipe-it makes the dates uniform and finely chopped in no time. But don't worry if you don't own one: you can chop the dates with a knife or even use the traditional method of pressing them flat on parchment paper. It works, but I find the food processor so much faster and easier that I never went back.
Step-By-Step Instructions

Remove pits from the dates (if applicable). Then, cut each date in half and place them in a food processor with a blade attachment.

Pulse until finely chopped (up to 1 minute).

Mix the chopped dates with peanut butter using a spoon.

Line a medium-large container (I use a baking dish) with parchment paper and spread the date mixture evenly. Finish by pressing it lightly to remove any gaps and create a level surface.

In a sauce pan, add the chocolate pieces and heavy cream and melt over low heat, stirring frequently, until smooth. (You can microwave it all to speed up the process, but I don't use this method due to potential health risks.)

Pour the melted chocolate over the date mixture and spread evenly with a spoon.

Transfer the container to the freezer and freeze until firm (at least two hours).

Once set, cut into bite-sized pieces and store in the fridge for an easy grab-and-go sweet snack.
NB: Don't store this snack at room temperature or it'll soften. It's always adviced to keep it in the freezer until it's time for a healthy snack.
