Turkey Goulash with Mushrooms

Ingredients
  

  • 800 g turkey
  • 2 onions
  • 3 cloves of garlic
  • 2 medium-size red bell pepper
  • 250 g mushrooms (ceps, champignons, or chanterelles)
  • 4 tablespoon olive oil
  • 5 tablespoon soy sauce
  • 350 ml vegetable broth
  • salt, pepper, and rosemary to taste

Instructions
 

  • Chop onion, bell pepper, and mushrooms. Cut turkey meat into bite-size pieces.
  • Fry the turkey in a skillet with preheated olive oil. Season with salt and pepper to taste, and transfer to a sauté pan.
  • Add 2 tablespoon of olive oil to the skillet, fry the mushrooms until golden, season with salt and pepper, and transfer to a sauté pan.
  • On the skillet, fry onion, garlic, and bell peppers, season with rosemary, salt, and pepper, and transfer to a sauté pan.
  • Pour the vegetable broth and soy sauce over the fried ingredients, stir and sauté for 15-20 minutes on low heat. Adjust the cooking time if needed to achieve tender meat.
  • Serve with rice or mashed potatoes (if your diet allows), or cauliflower rice.
