On a keto diet, you don't have to give up on that tempting chocolate & cream cheese cake that you've always loved. This recipe will help you create a healthy alternative to the traditional layered chocolate cake. With zero sugar added, it's a dessert that you won't feel guilty about!
Keto Chocolate Cake with Cream Cheese and Strawberries
Ingredients
Cake dough layers
- 9 eggs
- 9 tablespoon almond flour
- 3 tablespoon coconut flour
- 3 tablespoon cocoa powder
- a pinch of salt
- 1 drop Amaretto flavour
Filling cream
- 300 g cream cheese
- 100 g heavy cream
- 6 tablespoon Monk fruit sweetener
- 3 teaspoon vanilla extract
- 60 g fresh strawberries
- 100 g roasted peanuts
Topping cream
- 300 g cream cheese
- 100 g heavy cream
- 2 tablespoon Monk fruit sweetener
- 2 tablespoon cocoa powder
Instructions
Prepare the cake layers
- Separate the egg whites from the yolk.
- Add a pinch of salt to the egg whites and whisk until stiff.
- Add 2 tablespoon of Monk fruit sweetener and continue whisking until stiff.
- Now, onto the dough.Add the remaining 5 tablespoon of Monk fruit sweetener to the egg yolks and whisk. The volume should increase almost three times with the mixture becoming light yellow.
- Add almond flour and coconut flour and whisk a little bit more.
- Next, add Amaretto flavor and cocoa powder, a tablespoon at a time, stirring after each addition.
- Once you have a homogeneous mixture, fold in the whisked egg whites.
- Divide the mixture into three equal parts and pour into three baking tins (22 cm diameter).
- Bake in the oven at 185°C (365°F) for 20 min.
Prepare the filling
- Take the cream cheese (room temperature), add Monk fruit sweetener, and whisk for about 2 minutes.
- Add the heavy cream and continue whisking until stiff.
- Add the vanilla extract and whisk just enough to incorporate the vanilla into the mixture. Fold the mixture into a pastry bag and place it in a cool place.
Make the topping cream
- In a bowl, add cream cheese (room temperature), Monk fruit sweetener, and whisk for 2 minutes.
- Add the heavy cream and whip until stiff.
- Add the cocoa powder, and fold the mixture into a pastry bag. Then transfer it to a cool place.
Assemble the cake
- Once the cake dough layers and the cream have cooled, you can start assembling the cake.Onto the first layer of the cake, add the filling cream only. Onto the second layer, add the cream and freshly cut strawberries. Spread the top layer with the topping cream and decorate with fresh strawberries and roasted peanuts.
