This strawberry cream cheese cake is versatile enough to please various tastes. It's perfect for keto diet, summer parties, family gatherings, picnics, and many other occasions. No-bake Strawberry Cream Cheese Cake
Ingredients
Bottom layer
- 200 g cream cheese
- 100 g heavy cream
- 6 tablespoon monk fruit sweetener (if you have a sweet tooth, increase the amount slightly)
- 165 g curd (opt for a high-fat curd)
- 2 teaspoon vanilla extract
- 30 g gelatin
Middle layer
- 400 g blended strawberries
- 5 gelatin sheets
Top layer
- 200 g cream cheese
- 100 g heavy cream
- 3 sheets of gelatin
Top strawberry layer
- 200 g blended strawberries
- 3 sheets of gelatin
Instructions
- Whip cream cheese with monk fruit sweetener.
- Add heavy cream and whip until stiff.
- Add curd and continue mixing.
- Add gelatin to the mixture and stir carefully.Pour the mixture into the cake mold and transfer to the freezer to set slightly.
- While the first layer is setting (it will take around 15-20 minutes), mix blended strawberries with gelatin.
- Once 15-20 minutes have passed, remove the first cake layer from the freezer, pour blended strawberry mixture on top of it and return to the freezer.
- While the 2nd layer is setting, let's prepare the cream.Mix cream cheese with monk fruit sweetener, heavy cream, and gelatin.
- Separately, mix blended strawberries with gelatin.
- Now, let's combine the strawberry mixture with the cream that you prepared.Pour the strawberry mixture into the cream, stir slightly but don't overdo! You should still be able to see layers of strawberry mixture and the light cream. They shouldn't blend completely or you will lose the layered look.
- Take the cake out of the freezer, pour the cream over the middle layer and return to the freezer for another 10-15 minutes.
- Once 10-15 minutes have passed, take the cake out of the freezer, and you can start decorating it.Use fresh strawberries, chocolate icing, coconut flakes, or other garnishes of your choice.
- When you're finished decorating, return the cake to the fridge (not the freezer this time) for final 6-8 hours to set.

Notes
We used gelatin in two different forms - gelatin sheets and gelatin powder. You can use both of the options or choose one that you prefer. Just follow the instructions on the packaging.
