Cheesy Fried Chicken Meatballs
Ingredients
- 400 g chicken fillet
- 250 g grated cheese
- 1 egg
- 1 small onion, chopped
- 1 tablespoon mayonnaise
- a pinch of salt, black pepper, chili powder, and herbs of your choice (we used thyme but dills or parsley will do just as well)
Instructions
- Finely chop chicken fillets (or grind the meat using a grinder - in that case, the texture will be different but the meatballs will taste just as good) and grate the cheese. Chop the onion.
- Combine all the ingredients in a bowl and mix well. The mixture should be rather sticky than liquid, otherwise, the meatballs won't stick together. If too liquid, add more cheese (or a little bit of flour, if you're not on a keto diet).
- Heat a medium-sized pan, and add olive oil. Form meatballs of your desired size and cook until golden from both sides.
- Serve with rice, or salads of your choice, or in a chicken burger or a sandwich. This is a very versatile dish!
